Ingredients
- 3 medium zucchini
- 1/2 cup of flour
- 1/4 cup of grated parmesan
- 1 egg, whisked
- chopped chives
- 1 teaspoon of baking powder
- salt
- pepper
- olive oil
Instructions
- Trim the ends from zucchini and grate them. Place in a colander and squeeze out as much excess moisture as possible, so that zucchini are completely drained.
- Transfer zucchini to a large bowl. Add flour, grated parmesan, whisked egg, 1 teaspoon of baking powder, chopped chives and season with salt and pepper to taste. Combine everything together.
- Heat olive oil in a large skillet over medium high heat.Drop three portions of zucchini mixture into pan, flattening with a spatula, and cook for about 2 minutes, until golden and cooked through.
- Flip and cook on the other side, about 1-2 minutes longer.

Remove excess oil with the paper towel and transfer to a plate. Repeat with remaining olive oil and remaining zucchini mixture.Serve with sour cream and sprinkle with chopped chives. Serve immediately.
